Ingredients:
- 2 Chicken breasts, diced
- Rice of your choice
- 1 green pepper
- 1 onion
- Handful of spinach
- Light soy sauce
- Butter
- Plain flour
- Chicken stock
- 1tbsp of Chinese Five Spice
- 1tbsp Medium Curry Powder
- 1/2 tsp Garlic powder
- 1/4 tsp Turmeric
- 1/4 tsp ground Ginger
Method:
- Cook the chicken in a frying pan on medium heat with oil of your choice.
- While the chicken is cooking, cut up your onion and Pepper and place in a bowl.
- Once the chicken is cooked, add just enough of the soy sauce so that it just covers the bottom of the pan, add the onions and the peppers and let it simmer.
- Next you need to get all of your spices together in to a bowl, and mix with a spoon.
- Get a small pan and put 3 tbsp of butter and put the heat to medium.
- While you’re waiting for the butter to melt put the kettle on for the stock.
- Once the butter is melted add 3 tbsp of flour then mix together with a whisk, it should be quite thick, this makes a roux which is a base for the sauce.
- Once your kettle has boiled add chicken stock to 450ml of hot water. Start adding the stock and the spices to the pan that the roux is in and whisk it all together, leaving the pan to medium.
- Add a little bit of the sauce to the chicken and cook for a few minutes then you’re done. Serve with rice.
